It is traditional to attribute writings to someone important. For example the Books of Moses contain anachronisms indicating that the most recent writer lived much later than Moses.
There were many editors both Jewish and Christian clergy and the origins of Genesis are Sumerian.
It was the Council of Trent 1545-1563 that decided which books were in the Bible of the Roman church. This might seem a remarkably late date - waiting 1500 years to decide what was a sacred book - but it could be that the conventional timeline starts 1000 years before the church itself.
There is also a proposition that the Old Testament was written in parallel with the NT - over the same period. This is particularly useful for the accuracy of prophecies.

I have heard rumours to that effect.
I guess it's not easy to determine the true origin of the Bible and its components. I've heard some people say that Genesis is much older than experts first thought.
